4 boneless skinless chicken breasts
1 tsp garlic powder
1 tsp paprika
½ tsp salt
½ tsp black pepper
1 tbsp olive oil
1 cup fresh spinach (chopped) For the Filling

½ cup shredded mozzarella cheese For the Filling
2 cloves garlic (minced) For the Filling
¼ tsp red pepper flakes (optional) For the Filling
Instructions
Step 1
Butterfly each chicken breast by slicing horizontally, creating a pocket (don’t cut all the way through). Season both inside and outside with garlic powder, paprika, salt, and pepper.

Step 2
In a bowl, combine chopped spinach, softened cream cheese, mozzarella, minced garlic, and red pepper flakes. Mix until creamy.

Step 3
Divide the filling evenly and stuff into each chicken breast pocket. Secure edges with toothpicks if needed.

Step 4
Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden brown.

Step 5
Transfer skillet to a preheated oven at 375°F (190°C) and bake for 15–20 minutes, or until internal temp hits 165°F.

Step 6
Let rest 5 minutes before serving. Pair with your favorite veggie or potato side dish.
