3 cups cooked shredded chicken
1 box (6 oz) stuffing mix
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1/2 cup chicken broth
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 cup frozen peas and carrots (optional)
Salt and black pepper to taste
1/2 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley

Step 1
Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch casserole dish.
Step 2
In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, garlic powder, onion powder, frozen peas and carrots (if using), and a bit of salt and pepper. Mix well.
Step 3
Prepare stuffing according to box directions, but reduce water slightly and use chicken broth for added flavor. Let it cool slightly.
Step 4
Spread the chicken mixture evenly in the casserole dish. Top with the stuffing, spreading it out but not pressing down.
Step 5
Sprinkle shredded cheese over the top if using.
Step 6
Bake uncovered for 30–35 minutes, or until bubbly and golden on top. Top with fresh parsley and serve warm!
