Ingredients

1 ½ lbs boneless skinless chicken thighs, cut into bite-size pieces
2 tbsp vegetable oil
Salt & pepper to taste
¼ cup low-sodium soy sauce
½ cup apple juice (or 2 tbsp bourbon)
? cup brown sugar
2 tbsp ketchup
1 tbsp apple cider vinegar
1 tsp garlic, minced
1 tbsp cornstarch mixed with 1 tbsp water (optional, for thickening)
