Ingredients
1/2 cup (1 stick) unsalted butter
3 ripe bananas (medium-large, mashed)
2 large eggs
1/2 cup plain Greek yogurt (or sour cream)
3/4 cup granulated sugar
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup chopped walnuts or pecans
1/2 cup chocolate chips
1 tbsp turbinado sugar (for topping)
Instructions
Step 1
In a small saucepan over medium heat, melt the butter. Stir constantly as it foams, then watch for it to turn golden and smell nutty (about 5–7 minutes). Remove from heat and cool for 10–15 minutes.
Step 2
In a large bowl, mash the bananas. Add cooled brown butter, eggs, yogurt, sugar, and vanilla. Whisk until smooth.
Step 3
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
Step 4
Gently stir the dry ingredients into the wet ingredients until just combined. Fold in any add-ins if using.
Step 5
Pour batter into a greased or lined 9x5-inch loaf pan. Sprinkle turbinado sugar on top if desired. Bake at 350°F (175°C) for 50–60 minutes, or until a toothpick inserted comes out clean.
Step 6
Cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy warm or at room temp!
