Ingredients

3 ripe bananas, mashed
2 large eggs
1/2 cup oil (vegetable or coconut)
1/2 cup sugar
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt

Instructions

Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment paper.

In a large bowl, whisk together mashed bananas, eggs, oil, sugar, and vanilla until well combined.

In another bowl, stir together flour, baking soda, and salt.

Gently fold dry mixture into the wet—don’t overmix! Pour half the batter into your pan. Sprinkle the cinnamon sugar swirl evenly. Pour in the rest of the batter. Optional: swirl a knife through the batter for extra marble effect.

Bake for 50–60 minutes or until a toothpick comes out clean. Tent with foil halfway through if the top is browning too fast.
