This creamy, dreamy casserole was created after a hectic weeknight with virtually no time for gourmet prep and only a handful of ingredients in the fridge. I threw everything into a dish, baked it off in the oven, and crossed my fingers that it would not be a disaster! WOW it turned out better than I envisioned!!!

Ingredients
3 cups cooked shredded chicken
4 oz cream cheese (softened)
1 cup shredded mozzarella cheese
2 cups fresh spinach (chopped)
1/2 cup sour cream
1/4 cup grated Parmesan
1/2 tsp garlic powder
1/2 tsp onion powder
Salt & pepper to taste
1/2 cup breadcrumbs (panko or regular)
1 tbsp butter (melted)
Instructions
Step 1
Preheat oven to 375°F (190°C). Lightly grease a 9x13 baking dish.

Step 2
In a bowl, combine shredded chicken, softened cream cheese, sour cream, spinach, garlic powder, onion powder, salt, and pepper. Stir until creamy and well combined.

Step 3
Spread the chicken mixture into the baking dish. Sprinkle mozzarella and Parmesan on top. If using breadcrumbs, mix them with melted butter and sprinkle over the cheese layer.

Step 4
Cover with foil and bake for 15 minutes. Remove foil and bake another 10 minutes, until the top is bubbly and lightly golden.

Step 5
Let it rest for 5 minutes before digging in. Serve with a light salad or garlic bread for a full meal!
