About This Recipe
Hey friends! So the other night I was scurrying around - errands, laundry, helping Sultan with some tech stuff (yes, you guessed it - again) - when I realized it was already 6 p.m. and I hadn't figured out what to do for dinner yet! I opened the fridge, found some leftover rotisserie chicken, about half a block of Parmesan cheese, and a bag of rice in the cupboard. That's when I thought of this Garlic Parmesan Chicken and Rice Casserole recipe.
It turned out so creamy, cheesy, and comforting I had to scribble it down to share with all of you. It actually tasted like something you would serve at a cozy dinner party, not a Tuesday night scrambled-together meal!

Secret Tips
Use freshly grated Parmesan — it melts better and adds way more flavor than the pre-shredded kind.
Sauté your garlic first if you want deeper flavor, but it’s totally fine to mix it in raw for a sharper bite.
Add a dash of chicken bouillon or better-than-bouillon paste to the mix for next-level umami.
Sprinkle crushed butter crackers or panko on top during the last 10 minutes for a golden, crunchy topping.
