Ingredients
4 boneless chicken thighs (or breasts)
1 tsp salt
½ tsp black pepper
1 tsp paprika
2 tbsp olive oil
2 cups baby potatoes, halved For the Potatoes

4 tbsp unsalted butter For the Potatoes

1 tbsp chopped parsley (optional) For the Potatoes
Juice of ½ lemon (optional) For the Potatoes
Instructions
Step 1
Pat chicken dry. Season both sides with salt, pepper, and paprika.
Step 2
In a large skillet, heat 2 tbsp olive oil over medium-high heat.
Step 3
Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
Step 4
In the same pan, add 1 tbsp olive oil. Add halved potatoes, season with salt and pepper.
Step 5
Cook 15–18 minutes, stirring occasionally, until golden brown and fork-tender. Remove and set aside with chicken.
Step 6
Lower heat to medium. Add butter to the pan. Once melted, add garlic and herbs.
Step 7
Stir for 1–2 minutes until fragrant. Don’t burn the garlic!
Step 8
Return chicken and potatoes to the pan. Toss gently to coat with garlic butter.
Step 9
Squeeze lemon juice if using. Garnish with chopped parsley.
Step 10
Serve hot straight from the skillet!
