I first tried a version of this dish at a Southern-style diner when we were traveling, and oh my goodness, I was hooked. I knew right then I had to recreate my own version — and I think I’ve nailed it.

Secret Tips

Let me give you the scoop from my own kitchen:
Use 80/20 ground beef – it holds together better and gives you the juiciest steak.
Don’t overwork the meat – mix it gently to keep your patties tender.
Brown the patties well – that golden crust adds so much flavor to the gravy.
Caramelize the onions slowly – low and slow brings out their natural sweetness.
