Ingredients
2 cups diced peaches (fresh or canned, drained)
¼ cup brown sugar
1 tbsp white sugar
1 tbsp unsalted butter
1 tsp lemon juice
1 tsp cornstarch
½ tsp ground cinnamon
Pinch of salt
8 egg roll wrappers
Small bowl of water (for sealing)
Oil for frying (vegetable or canola)
Powdered sugar (for dusting)
Vanilla ice cream or whipped cream
Instructions
Step 1
In a medium saucepan over medium heat, melt butter. Add peaches, sugars, lemon juice, cinnamon, and salt. Cook for 3–5 minutes until the peaches soften. Stir in cornstarch and cook 1 more minute until thickened. Let cool slightly.

Step 2
Place a wrapper on a clean surface, corner facing you like a diamond. Spoon 2 tablespoons of filling near the center. Fold the bottom corner up, tuck in sides, and roll tightly. Seal the edge with a little water.

Step 3
Heat 1–2 inches of oil in a frying pan to 350°F. Fry egg rolls 2–3 at a time, turning occasionally, until golden brown (about 2–3 minutes each). Drain on a rack or paper towels.

Step 4
Dust with powdered sugar and serve warm. Best with a scoop of vanilla ice cream or a drizzle of caramel sauce!
